拍黃瓜花生米 – Bruised Cucumber Salad with Peanut Powder

Bruised Cucumber Salad with Peanut Powder – 拍黃瓜花生米  (Pāi huáng guā huā shēng mǐ)

 

This cucumber salad is very good at whetting the appetite. With its low heat properties, it could cool down the body and reduces heatiness or heat poisoning, therefore very good for health. Fresh cucumber is also known to lower sugar absorption and therefore very good for people who wants to lose weight.

 Ingredients:

Fresh cucumber

Fresh Peanuts

50g

Vinegar

1 tbsp

Salt

To taste

Granulated Chicken Broth

To taste

Salad Oil

1/2 tbsp

  1. Pick out your favourite salad oil dressing. Any type will do
[Tip 1: Chinese recipes are very versatile and open to interpretation, so feel free to experiment.]
  1. Peel the cucumber

 

  1. Cut into rough stripes and then bruise the cucumber with the back of your knife.

 

[Tip 2: If you’re worried about bits of cucumber flying all over the place, wrap the cucumber up in kitchen towel before bashing it gently with the knife.]

 

  1. Mix the bruised cucumber with salt and granulated chicken broth.

 

  1. Peel the peanuts and fry it over a low fire with some garlic and onions for extra fragrance.

 

[Tip 3: Put the peanuts into a cold wok and pour just enough oil to cover it. Start with a low medium low fire and gently stir now and then for five minutes. When the peanuts start to change colour, pour in the garlic and onions and fry until the onions and garlic are crispy. Remove from oil quickly.]

 

  1. Mix the fried peanuts and bruised cucumber together. You may add your preferred salad oil here.
