Steamed Milk Buns – 奶馒头

 – (Niú nǎi mán tou)

Amount:

Makes 8 buns

 

 Ingredients:

All Purpose Flour

250g

Fresh Milk

135g

Yeast

3g

Sugar

30g

 

 

Method (The numbers are according to the pictures in the original site):

 

 

  1. First, warm the milk using a double boiler up to 28 degrees. Stir in the yeast with chopsticks.
  2. Once the yeast has bubbled up, mix the milk with the flour and sugar. You may add up to a maximum of 10g of extra flour if the flour mixture is too wet.

 

  1. Knead the dough until it’s nice and elastic. Place the dough in a glass bowl and let it rise until it doubled in size.

 

  1. Punch down the dough and roll it out into a tube.

 

  1. With a dough cutter or chopper, cut the dough into 8 even pieces

 

  1. Arrange the buns onto a steamer. You may roll it into balls or leave it in its cut shape. Let it rise for another 5 minutes, before steaming it on high heat for about 15 to 20 minutes.

 

  1. Reduce the heat of the water by adding cold water into the steamer (Make sure to remove the bread first so that you don’t drench it, lol). Continue steaming over low fire for 13-15 minutes before switching off the fire. Leave them on the steamer for another 5 minutes before taking them out

 

  1. And it’s done!
