Fluffy Filled Cakes 夹馅酥松糕饼 – (Jiā xiàn sūsōng gāobǐng)

Makes 6 pcs

 

 Ingredients:

Cake Flour

100g

Butter

60g

Sugar

50g

Salt

1g

Egg

1

Milk

70g

Baking Powder

1/2 tsp

Melon Seeds

To taste

 

 

Filling

 

Blueberry Jam

 

 Note: Su Nuan Nuan mentioned that she uses condensed milk for the cake. Personally, I’ve never tried a condensed milk filled cake, I wonder what it’s like, lol!

 

 

  1. Prepare all the ingredients. Sift flour, baking powder and salt into a mixing bowl

 

  1. Beat the softened butter, gradually adding sugar as you go

 

  1. Keep beating until the butter turns into a pale yellow colour

 

  1. Add milk into the butter, and mix thoroughly

 

  1. Add the sifted flour gradually into the butter mixture and fold

 

  1. Place half of the cupcake mixture into 6 cupcake paper containers. Pipe in the blueberry jam into the middle of the mixture

 

  1. Place the rest of the batter over the blueberry jam and decorate with melon seeds

 

  1. Bake at 180 degree Celsius for 18 minutes. The time may vary depending on your oven

 

  1. You can eat them once cooled
